Kari Mi / Curry Noodles
Ingredients
Curry noodles is also known as curry laksa , is a combination of Chinese and Malay cuisine which brought in by the Peranakan group in the 15th century.
There is a slight difference in preparing this delicious curry noodles by household, restaurant and caterer level as in the type of ingredients added into the dish, but the use of grated coconut and milk (coconut milk) is remain. However, people do not use the traditional way to make the curry soup because there's a lot of work and also time consumption. Additional, the food factories had come out with the easy solution to make the curry soup, such as ready made coconut milk and curry powder. Though there's an an advance in technology, some still believe that using the grated coconut to make the soup base will taste much better than using the processed coconut milk, but less.
The online recipe that is using grated coconut with extract of milk as the base of the curry soup is much more time consuming that the actual recipe that using the ready made coconut milk. As for the ingredients, the online recipe had a limited choice of / basic ingredient that found in the dish compared to the actual, where the actual recipe's ingredient can be added according to the likes of the people who prepare it. Different culture or region will also add some unlikely found ingredient in others culture.
Before go in example, let me briefly introduce my interviewee household level, which is Mr.Lee. For example, the Chinese, they will add pig's blood, which is rather disgusting food, which can't be found in the online recipe. Coincidentally, Mr.Lee and his family do not eat pig's blood, so that it also can't be found in the recipe too. Beside that, the budget spent not only depends on the quantity of ingredients use but also the geographical. For example, fresh grated coconut is rather hard to be found in the city compared to the village. Even there is, the energy that required to make the coconut milk using the grated coconut is much more greater than the processed coconut milk. As those who prepared in huge quantity using the traditional grated coconut, it will required a lot of workers.
Lastly, as for the skill level, it really can't be measure or compare as it is more likely depend on the customers preferable. Different customer will like different ways of cooking, For example, some would like the taste of coconut stronger and some dislike the strong smell of prawns. All have their standards, however restaurant and shops could not simply change their recipe as they like, but the household could. As for the caterer, they will change if there's any request from the customer who ordered it.

1 tablespoons scallions
1 pound yellow noodles
3/4 pound cooked chicken, shredded
3 tablespoons bean sprouts, blanched
1 lime, cut into 4wedges
fish ball and meatball
Ingredients for curry soup
1 cup of coconut milk
2 tablespoons curry powder
2 tablespoons cooking oil
2 tablespoons fried shallots
3 garlic cloves, chopped
1 teaspoon hot chili paste (sambal)
2 tablespoons minced peeled fresh ginger
4-5 cups water
1 teaspoons water
3 pieces of bean curd, sliced
Method
- Before stating with the soup, cook the fish ball, meat ball, and cockles by using boiling water and oil fried the shallots. The cockles boiled about 10-15 minutes then shucked.
- To prepare the curry soup, first heat up the cooking oil in the pot with medium heat. After the pot is heated up, add the chopped cloves and stir till fragrant on low heat and then add in the curry powder, chili paste minced ginger to stir and mix it properly for 30 seconds to 1 minute.
- Add in the coconut milk and stir till thick and fragrant for another 3 minutes.
- After that, add in 5 cups of water, 1 teaspoon of salt, sliced bean curd, fried shallots and yellow noodles and wait for another 5-10 minutes to let the curry soup boiled the yellow noodles.
- Lastly. place the curry soup noodles on a medium size bowl and garnish with fish ball, meat ball, cockles, bean sprouts and scallions. Then serve piece of lime together with the dish.
Put in all the ingredients left before pouring the curry soup. |
Now the household made curry noodles is ready to be enjoy. |
